My personal thoughts:

I'd say leave it uncensored. Take each instance it is used by a case-by-case basis.
In example, if someone uses it in an offensive way, they will be punished.
In example, if someone uses it in a non-offense way such as quoting lyrics from an older song (back when the word "gay" was freely used with a positive connotation) or it's original meaning.

No, it should not be a censored word. If we make it a censored word, it would make the MCGamer network seem highly homophobic and give it a generally bad reputation. Besides, people that use it as an insult can be screenshotted and reported and dealt with appropriately. I cannot see it ever being a censored word.

I honestly don't know. I'm afraid that these servers are going to become like Hypixel's, where the word "damn" is considered bad.

the word "damn" and "crap" are allowed because it is a light swear. But the word "goddamnit" is not allowed and offensive because it relate to religion. That's what the rule said

In my opinion, gay should not be censored. Most of the time when people are calling other people gay, they are not being homophobic but rather they are being ignorant. And you can't really do anything about ignorance.
